Tomato and fruit spicy dressing
200gr of peeled and chopped pears
2 medium sized onions, peeled and chopped
150ml of wine vinegar
12grs of black pepper
8 full cloves
15grs of ginger root
A spicy pepper
15grs of salt
3 spoons of olive oil
Put the tomatoes, fruit, onions and the oil (cold) in a pot and cook until it is all properly cooked and tender. You then add the rest of the ingredients.
Keep the mixture on the stove without putting a top on the pot for at least 30 minutes and then put it through the sieve.
Continue cooking the mixture for another 15 minutes, stirring until it thickens.
To finish, pour the dressing into sterilized bottles and keep in the fridge until it is used.
It is ideal to keep it in the fridge and serve as a cold dressing for escalope, chicken, fried fish or barbecued meat.
